Peppered Mussels
Instructions
The first thing to do, and the most annoying, is to clean and scrub the outer shell of the mussels (1), removing the byssus (that is, the beard on the shell).
Once cleaned, heat the garlic with oil in a frying pan and add the mussels (2-3).
Cover the frying pan with a lid (4) and cook for a few minutes on a high flame until the mussels have opened. Towards the end of the cooking, add plenty of black pepper (5) and if you want also the chopped parsley. Shake the frying pan holding the lid firmly shut so that the pepper and the mussel sauce coat everything well. Take out your mussel impepata of the frying pan and serve it well hot!
