Pineapple Carrot Cake
Instructions
Mix eggs, oil, ginger, brown sugar and pineapple juice. In a bowl, mix flour, baking powder, baking soda and salt. Then add cinnamon, nutmeg, allspice. Mix the wet and dry mixtures. Add carrots, pineapple and walnuts and stir it till mixed. Grease a pan and pour your mixture into it. Bake it for 70-80 minutes at 325 F. Inserted a toothpick to check if the cake is done. The toothpick should come out dry. Cool the cake and make icing. Mix icing sugar, cream cheese and butter into a smooth paste and apply it over the cake. Top the cake with walnuts and pineapple and enjoy!!!
