Polenta

Instructions

1. Combine cornmeal and 1 cup of cold water.
2. Bring remaining 2 cups of water to a boil in a sauce pan over medium-high heat.
3. Add cornmeal mixture slowly, stirring well.
4. Reduce heat to medium and cook, stirring constantly until mixture is thick and begins to form large bubbles, about 3 to 5 minutes. Continue cooking another 1 to 2 minutes.
5. Remove from heat and stir in cup butter (or cup butter if desired.) and cheese, blending well.
6. Pour into a buttered baking dish and sprinkle with paprika.
7. Bake in a pre-heated 350 degree oven until top is brown and crusty, about 35 to 40 minutes.
