Polenta Putanesca

Instructions

Preheat grill.
In a medium bowl.mix ricotta and pepper and set aside.
Slice Polenta into 8 even slices.
Lightly spray both sides with cooking spray.
Heat a large non-stick skillet on medium and add diced pancetta; cook and stir unti; crispy, about 2 minutes
Transfer pancetta to a plate and set aside;
drain any excess fat.
Add ground beef to skillet; cook and stir until cooked through about 5 or 6 minutes;drain any fat.
Stir in sauce and reduce heat to medium low.
While ground beef is cooking, grill polenta on each side for 4 to 5 minutes.
Divide spinach among 4 plates and top with two slices of polenta.
Pour an equal amount of sauce over polenta slices and top sauce with 2 Tbsp. ricotta.
Garnish with crispy pancetta and serve.
