Shellfish Sausage
Instructions
1. Clean shellfish. For clams I followed these directions and for mussels I used these.
2. Heat olive oil over medium-high heat in large skillet or pot. Add shallots and garlic and cook 3-4 minutes. Add mushrooms and seasons and cook about 2-3 minutes. Mix in the wine and simmer until liquid has reduced in half, about 2 minutes. Add in broth and shellfish and return to a simmer. Cover the pan with a tight-fitting lid and cook until shellfish have opened, about 5-8 minutes.
3. Meanwhile grill andouille sausages and slice into pieces. Add sausage to cooked shellfish mixture. Serve with grilled flatbread lightly topped with butter and enjoy!
