Shrimp Stir Fry With Rice

Instructions

1. First things first - get your large cooking pot and start the water for your rice. Follow the directions on the bag for portion size and water amount. Next, get your large skillet or wok and put it on the heat on the high end of medium high. If you're using an electric stove and it's a smaller burner, put in on high. Pour in only enough oil to coat the bottom of the pan/wok well. Once the skillet/wok is HOT, add your vegetables.

2. Make sure the shrimp are cooked will and aren't frozen in the middle.
Once the vegetables are starting to loosen up and release liquid, it's time to add the shrimp. Check the water in your large cooking pot. It should be boiling by now and ready for the rice to go in. (See Resources section below for a link to my easy step-by-step directions on How To Make White Rice.) Add a pinch of salt and garlic powder to your vegetables and shrimp. You'll want to make sure you stay near the stove. You're going to be turning these vegetables and shrimp over and stirring them a lot - hence the name "Stir Fry" Once the shrimp are a nice bright reddish-pink and cooked through, the vegetables should be ready to go too. Turn off the heat and add your sauce. Stir well.

3. Break the eggs up well.
Put your other skillet on the heat on medium high heat. Once the skillet has heated add 2 tbsp of butter and let it melt. Keep an eye on your rice. It should be pretty close to being done if it isn't already. When the butter is almost melted, add 1 tbsp of garlic powder to the butter. Immediately add your eggs to the skillet. Once your eggs have started to cook, take the spatula and start moving them around and breaking them up. (See picture) You really want to break them up good so that you can distribute them throughout the rice. Cook them thoroughly.

4. Really turn the rice over to mix the eggs.
Now get as much rice as you can comfortably work with in the skillet and put it into the skillet on top of the eggs. Don't use it all. Leave some aside for those who may want white rice with their stir fry. Now you'll want to add the other 2 tbsp of butter to the top of the rice, and about 10 shots of soy sauce. Here is where you really work the rice with the spatula. You've got to get that egg incorporated with the rice, garlic butter, and soy sauce. It's not difficult, but you can't let it sit there in one spot. Keep that rice moving. Turn it over in sections and chop the eggs through the rice like you did with the eggs before.

5. Beautiful Shrimp Stir Fry on Fried Rice
Once the rice is done, lay a few scoops of rice in a bowl or on a plate. Hollow out the middle of the rice and scoop in the shrimp stir fry. Add a few dashes of soy sauce or pepper if you like. It's time to eat! Enjoy.
