Southwestern Beans
Instructions
1. Boil beans for 10 minutes and turn off the heat. Let it rest for an hour.
2. Meanwhile, crush cumin, coriander, cilantro, dry mustard, paprika, pepper, bay leaf, chili peppers, salt.
3. Chop all the vegetables. Drain the beans, add molasses, ketchup and brown sugar to it.
4. Add seasoning and vegetables, bacon, beer, lime juice and water to cover the beans.
5. Stir and cook at medium low heat for 4 hours.
6. Remove cover and increase heat to reduce sauce. Keep stiring.
7. Serve with cilantro and cheddar sprinkled over it.
