Spaghetti Squash Alfredo
Instructions
Yields: 6 to 8 servings
Ingredients:
1 medium spaghetti squash
1 cup sour cream
cup shredded mozzarella cheese
cup grated Parmesan cheese
2 tsp. minced garlic
tsp. salt
tsp. pepper
Preparation Directions:
~ Prick spaghetti squash with a fork several times. Cook in microwave until soft. About 5 to 10 minutes depending on the size of the squash. Cut in half, take out seeds and separate into strands.
~ In a saucepan, combine sour cream, cheeses, garlic, salt and pepper and whisk until smooth and creamy stirring constantly. Add spaghetti squash strands and heat thoroughly.
~ Serve immediately.
