Steel Cut Oat Pudding With Dark Chocolate And Lime
Instructions
1. In a medium saucepan, combine soy milk, coconut milk and oats.
2. Bring to a simmer over medium-high heat, stirring frequently.
3. Reduce heat to low; simmer, stirring constantly, 7 minutes (mixture will be thin).
4. Remove from heat; stir in sugar and lime juice.
5. Let stand in saucepan uncovered 10 minutes or until slightly thickened.
6. Transfer to bowls; top with chocolate and lime peel.
7. Serve warm, at room temperature or chilled.
