Sweet Pepper And Peach Chicken

Instructions

~ Sprinkle both sides of chicken breast with fajita seasoning. In a large skillet heat 1 tbsp. oil over medium heat, add chicken and cook until chicken is no longer pink (170 degrees); turning chicken to brown both sides. Remove chicken from skillet and keep warm.
~ Add remaining oil to skillet; add sweet pepper strips and cook for 3 minutes or until crisp tender. Gently stir in peach slices. Cook and stir 1 to 2 minutes more or until heated through. Spoon over chicken.
