Vegetable Frittata
Instructions
~ Saut onion and mushroom in hot oil until tender. Stir in spinach and saut for 3 minutes or until spinach wilts and the liquid has evaporated. Remove from heat and set aside.
~ In a large bowl whisk together eggs, egg whites, cheeses, milk, pepper, salt, and nutmeg until well combined. Pour over onion mixture, stirring to combine.
~ Bake at 350 degrees for 12 to 15 minutes or until set. Let stand for 3 minutes then cut into wedges to serve.
