Veggie Stuffed Manicotti & Simple Tossed Salad
Instructions
1. In a huge pot of salted water,boil the manicotti shells for 10 minutes.
2. While boiling, In a large bowl we add some tofu,1 tsp fresh oregano, 1/2 tsp fresh thyme, 2 tsp fresh basil, 2 garlic cloves, 1/4 tsp pepper and 1/4 tsp parmesan cheese. Mix everything together.
3. Using a pastry packing bag,place the tofu spread on it. Fill the manicotti shell with the spread and put it on a plate and top with a tomato sauce. Place ithis at the oven at 375 degrees for 5 minutes.
4. For the salad: Slice some domestic mushroom ,grape tomato and add the spring mix with lettuce. Add 1 tbsp of fresh lemon juice and 3 tbsp of olive oil. Mix it well.
5. When the manicotti is already finish. Place it on a plate and top it with a parmesan cheese.
6. Enjoy and serve.
