Wegmans Perfect Mashed Potatoes
Instructions
1. Place potatoes in medium pot; cover with cold water. Bring to boil on HIGH; reduce heat. Simmer 30-35 min, until knife-tender. Drain.
2. Pour milk into small saucepan; bring to simmer on LOW. Set aside and keep warm.
3. Return potatoes to pot; heat on LOW 3-5 min to remove excess moisture.
4. Add butter. Gradually add milk.*
5. Mash with potato masher or hand-held mixer. Season to taste with salt and white pepper.
Chef Tip(s):
* *You may not need all the milk depending on consistency desired.
* To keep potatoes warm for up to an hour, transfer them to a ceramic or glass serving dish and cover with plastic wrap. Put this dish in a large, shallow pan of hot water (make sure the water doesn't reach the rim of the potato dish). Keep the water hot by changing it several times.
