Winter Salads

Instructions

Combine salad ingredients. Combine dressing ingredients and toss with salad just before serving.
Note: Olive oil will partially solidify if chilled, so if you make the dressing ahead of time and refridgerate, make sure to take it out a half hour or so before serving.
Note: I often use two apples if I can't find a good pear.

Ingredients

SALAD
1 head romaine lettuce
c. dried cranberries (craisins)
1 pear, cut up
1 apple, cut up
1 c. slivered almonds
1 c. shredded swiss cheese
POPPY SEED DRESSING
c. sugar
1/3 c. lemon juice
1 tsp. Dijon mustard
Diced onion, to taste
2/3 c. light olive oil
1 T. poppy seed
