Arbi Fry
Instructions
Wash and parboil arbi in hot water till done. Drain, cool and peel. Heat sufficient oil in a kadai and deep-fry the arbi. Drain when half done and place on an absorbent paper. Cool and press between palms or a plastic paper. Heat the oil again and deep-fry the arbi on high heat till golden. Drain and place on an absorbent paper. Heat one tablespoon oil in a pan add cumin seeds, curry leaves and green chillies and saut for thirty seconds. Add coriander powder, turmeric powder, red chilli powder, garam masala powder, salt and the fried arbi. Toss for three to four minutes. Add tamarind pulp and toss further for two minutes. Sprinkle coriander leaves and remove from heat. Serve hot.
