Baja Fish Tacos

Instructions

Mix all dry rub ingredients together and season tilapia to taste with it. In a hot skillet with olive oil sear fish on both sides until golden brown and then deglaze with tequila. While the fish is cooking cut all vegetables accordingly. To make salsa add all ingredients together in a bowl, mix and season to taste. In a bowl mix together lettuce, scallions and cilantro leaves. In a bowl grate together both cheeses. On 350 degrees place tortillas on wire racks in oven for 2-3 minutes or until warm. Once fish in completely cooked be sure to fork to break up. Once everything is prepared make taco as followed in video. All amounts by personal desire. Serve hot and enjoy!
