Coconut Chilli Rice
Instructions
1. Fry grated coconut, red chillies, urad dhal in ghee till it becomes golden brown.
2. Wash rice and cook it. Allow it to cool.
3. Fry mustard seeds, asafoetida, curry leaves in little oil and add to the cooked rice.
4. To this add already fried coconut, red chillies and urad dhal, add salt and mix well.
5. Fry cashewnuts in ghee and add to the above.
This dish is very simple and liked by all. We make this dish along with lemon rice (recipe i had already posted) , tamarind rice, and curd rice during tamil new year.
Side dish for this rice will be fried papadam, chips. Even deep fried potatoes goes well with this dish
