Cured Salmon
Instructions
1) Pat chopped thyme, lemon zest, then mixture of salt and sugar on salmon.
2) Add squeezed lemon juice and 1/4 cup rice wine vinegar. Cover with a plastic wrap and let it cure for 46 hours.
3) Slice thinly and serve.
