Egg Cups
Instructions
1. Heat oven to 400 degrees.
2. Brush 4 cups in the center of a muffin pan (I actually use small ramekins) with melted butter.
3. Cut out 4 bread rounds and fit them in the bottom of the cups. Season lightly with salt and pepper.
4. Cut 4 strips of bread to wrap around the sides of the muffin cups, season lightly with salt and pepper, and wrap them around the sides, pressing gently to conform to the cup. You may need to do a little patching to get all the way around. Don't let the bread poke above the top of the cups - it will burn.
5. Crack an egg into each cup, season with salt and pepper, add half a slice of prosciutto and sprinkle with a bit of cheese.
6. Bake for 14 minutes for runny yolks or 20 minutes for hard-boiled yolks (the hard boiled are better for rewarming).
7. Run a knife around the sides and gently unmold.
