Eggplant Tomato Curry
Instructions
1. First cut the eggplan and fry in the oil and keep a side.
2. In a pan add oil, red chili dry, mustard seeds, cumin seeds, onion chopped, curry leaves, mix well, chopped green chili, ginger garlic paste, turmuric, and mix well for 2min
3. Then add chopped tomatoes then add coriander powder, chili powder mix well and cover it with lid and cool for 5mins.
3. In a pan dry roast peanuts and sesame seeds, pound it and keep aside.
4. Once the tomatoes are cooked add eggplant mix it, if needed add water cover it with lid and cook for 4min and then add the powdered peanuts and sesame seeds mix well and switch off the flame.
5. Lastly top it of with chopped coriander leaves.1 tsp coriander powder
