Filet Mignon With Pinot Noir Sauce
Instructions
1. Coat Filet Mignon ( beef tenderloin) with oilive oil,salt and pepper.
2. Sear all sides of the tenderloin well (about 2 minutes per side)
3. Set oven to 350 degrees.
4. Once browned,transfer beef/skillet to oven and cook until thermometers registers 110 degrees.
5. After the beef is cooked from the oven set it aside and let it rest for about 10 minutes.
Pinot Noir:
1. Melt the butter in the saucepan. Add onion. After 4 minutes add Pinot Noir
2. Add thyme, peppercorns,tomato,stock, tbsp honey. Stir around and wait after 10 minutes.
3. Season with salt and pepper to taste.
4. Strain sauce through a fine mesh strainer. keep warm until ready to serve.
