Instructions
To make ginger juice, place the ginger root in the refrigerator for several hours to make it easier to remove the skin. Once you remove it from the refrigerator, use a peeler to completely remove the outer skin. Always start with a fresh piece of ginger root since it will be easier to get juice from it. To test for freshness, break off one of the knobs. You should hear a sharp snap if it's fresh. If not, use a fresher ginger root.

Once the skin is removed, use a grater to grate the ginger into small pieces to make the juice easier to extract.

To make ginger juice, place the grated ginger into a garlic press and firmly press out the juice.

You can also use a piece of cheese cloth to squeeze out the ginger juice, but the garlic press makes the process much easier.

If you don't have time to make ginger juice, you can buy it by the bottle at some gourmet food stores. It's nice to have a bottle handy for making quick salad dressings or to use as a marinade.
