In The Kitchen With Ken Tempura Battered Prosciutto Shrimp Wraps
Instructions
TEMPURA BATTER
Combine ingredients in a medium-sized
bowl and mix together well until you have a
nice thin batter.
WRAPS
Begin heating the vegetable oil to
between 350 and 375 degrees in a cast
iron skillet. Lay the prosciutto on a flat
surface. On top, add a slice of avocado,
a shrimp and a few slices of the pickled
red onion. Roll everything together in the
prosciutto and dip into your tempura batter.
Once the wrap is coated, drop it into the oil
and cook for 3 to 5 minutes on each side
until it reaches a nice golden color. Hit it
with a little lime juice and serve hot.
Slice the red onion and place in a pot of
bowling water for a few minutes until soft.
Add the cooked onion to a bowl and cover
with the lime juice and salt. Leave for a few
hours until the onions turn pink.
