Mayonnaise

Instructions

To prepare the mayonnaise, it's very important to use oil and eggs at room temperature and to carefully separate the yolk from the white. At this point, take a high rim bowl and place it on a clean cloth (1) (so it won't move while working the mayonnaise); put the yolks into the bowl together with a pinch of salt and pepper (2), then add a teaspoon of vinegar (3).
Work the ingredients with an electric beater (4) (or with a food processor), after that begin to drizzle a few drops of oil at first (5), then a very thin stream (6).
Stir always in the same direction (7) until you obtain a thick sauce (8). After drizzling the oil, add the lemon juice (always beating), and add more salt or pepper to taste. If you're not going to consume it immediately, place the mayonnaise in the fridge (9), covered with cling film.
