Oven Roasted Cherry Tomatoes

Instructions

Preheat the oven to 400 degrees. Wash and dry the tomatoes, removing any stems that are present.

Place the amount of tomatoes you will be baking in a large mixing bowl. Pour olive oil lightly over the tomatoes and toss gently. Be careful not to smash the tomatoes as you toss them. You want all of the tomatoes coated with the olive oil. Work in small batches if you are planning to cook a lot of tomatoes.

Place the tomatoes on a baking pan or dish with a side edge, or a broiler pan. If you use a cookie sheet, you will likely end up with tomatoes at the bottom of the oven. Generously salt and pepper the tomatoes. Bake the tomatoes until soft, about 20 minutes. Serve immediately.
