Pan Seared Talapia Over Indian Corn
Instructions
1) Season both sides of talapia with salt, half of the smoked paprika, and fresh black pepper. Rub a little bit to incorporate flavors.
2) Sautee with olive oil the onions, garlic, and jalapeno. Season with salt. When onions are a bit translucent, add the corn, paprika and cumin. Add a splash of water to add some moisture.
3) Add the beans, quartered tomatoes, a pinch of salt, and black pepper. After a few minutes, add the butter and the chopped cilantro.
4) In a separate pan, heat olive oil and fry the talapias.
5) Serve talapia over the corn in the plate.
