Prawn & Potato Salad
Instructions
Pour the Pototoes into a saucepan with their liquid and boil for 5 minutes. Drain and place into a bowl. Add the Olive Oil, Salt, Pepper, Mustard and Sugar. Mix well and allow to go cold.
Set aside a few of the Prawns, but add the rest to the Potatoes. Mix well, but carefully. Spoon the Potatoes & Prawns onto a serving plate and arrange the Watercress leaves over them. Garnish with the Prawns that you set aside.
