Truffled Mushroom And Potato Gratin
Instructions
Saute mushrooms with a healthy pinch of salt in butter over medium heat for 15 minutes until well-browned. Reserve.
Butter a deep 9 x 13 baking dish. Rub the bottom with garlic, and sprinkle with the thyme leaves. Layer in 1/3 of the potatoes. Top with salt and fresh ground black pepper to taste. Top with 1/2 the mushrooms, and 1/3 the cheese. Repeat this to make a second layer. Top with the last 1/3 of the potatoes. Pour over the chicken broth and cream. Top with the last of the cheese.
Bake at 350 for 45 minutes covered with foil. Remove foil and bake for another 15 minutes, or until the potatoes are tender and the top is browned. Best if left resting for 15 minutes before serving.
