Vegan Artichoke Soup

Instructions

In your soup pan, saute the artichoke hearts and garlic with the butter until golden and tender. Then, add the stock and potato. Once everything is cooked thoroughly, blend the soup so that its a nice, smooth puree. You can do this one of two ways; we recommend using a hand blender. That way you can just blend the soup in the pan that youve cooked in. Less dirty dishes that way. However, no stress if you dont have a hand blender, just remove all the veggies from the soup pot and about 1/3 of the stock and blend in a blender. Then, transfer the pure back to the remaining stock and stir it all together. Season with salt and pepper and serve with some fresh vegan French bread.
