Wegmans Grilled Foil Packet Halibut

Instructions

Preheat grill on HIGH 10 min.


Arrange 2 fillets a few inches apart on single piece of foil; season with salt and pepper. Top each fillet with 3 thyme sprigs, 4 lemon slices, and 2 bay leaves. Layer another fillet on each, making a "sandwich." Season with salt and pepper; cover with other piece of foil. Crimp edges to form tightly sealed packet.

Reduce heat to MEDIUM. Grill uncovered, 8-10 min, or until internal temp reaches 130 degrees. Check by inserting thermometer through foil and halfway into thickest part of fish. Carefully open foil packet using oven mitts; avoid steam. Let rest at least 2 min.
