Garlic & Oil Linguine

Instructions

1. Toast pine nuts in a small dry frying pan until fragrant.
2. Once the pine nuts are golden and fragrant remove them from the heat and set aside.
3. Boil the water for the linguine.
4. Thinly slice garlic cloves.
5. When water comes to a boil add salt and the linguine. Follow package instructions for cooking time (approximately 10-12 minutes).
6. As the linguine cooks, heat the extra virgin olive oil in a lage frying pan over medium heat.
7. Add the sliced garlic. Saute it until it becomes lightly golden.
8. Add the red pepper flakes, salt, pepper and more olive oil (if necessary).
9. Once the linguine is cooked, drain it and add it to the frying pan.
10. Add the pine nuts and parsley.
11. Toss the linguine with sauce to make sure the ingredients are well mixed.
12. Place the linguine into individual serving dishes. Top each dish with 1 tablespoon grated Fontina cheese and serve.
