Warm Beef Tenderloin Salad With Mango And Avocado

Instructions

1. Combine shallots and mango nectar in a small saucepan.
2. Bring to a boil over high heat.
3. Reduce heat; simmer uncovered until reduced to about 1/3 cup, 6 to 8 minutes.
4. Remove from heat; set aside.
5. Meanwhile, sprinkle salt and pepper over steaks.
6. Heat a large nonstick skillet over medium-high heat until hot.
7. Add steaks; sear for 3 minutes. Turn steaks over; reduce heat to medium; continue cooking 3 to 4 minutes for medium rare steak or longer to desired doneness.
8. Transfer steaks to a carving board; let stand 5 minutes.
9. Arrange arugula on four serving plates.
10. Arrange mango and avocado slices attractively over arugula.
11. Carve steaks crosswise into thin strips; arrange over salads.
12. Drizzle mango mixture over salads.
